Healthy Dinner Ideas / Baked Pasta

Ingredients: Pasta of your choice, 1lb ground low fat meat, 1 jar of pasta sauce (more if you like your pasta extra saucy), 1 can fiesta nacho cheese soup, shredded cheese.  Brown ground meat, Cook pasta to al dente. While these are cooking mix fiesta nacho cheese soup and pasta sauce in a baking dish. Add in browned meat and pasta to the sauce mixture. Cover in low fat shredded cheese. Bake at 350 till cheese browns approx 15-20 minutes. This is a great meal that can be prepped the night before and just baked when you get home from work.

Ingredients
2 cups rolled oats
3/4 cup packed brown sugar
1/2 cup wheat germ
3/4 teaspoon ground cinnamon
1 cup all-purpose flour
3/4 cup raisins (optional)
 
3/4 teaspoon salt
Playgroup Granola Bars
Ingredients
1/2 cup honey
1 egg, beaten
1/2 cup vegetable oil
2 teaspoons vanilla extract

Directions
Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 9x13 inch baking pan.
In a large bowl, mix together the oats, brown sugar, wheat germ, cinnamon, flour, raisins and salt. Make a well in the center, and pour in the honey, egg, oil and vanilla. Mix well using your hands. Pat the mixture evenly into the prepared pan.
Bake for 30 to 35 minutes in the preheated oven, until the bars begin to turn golden at the edges. Cool for 5 minutes, then cut into bars while still warm. Do not allow the bars to cool completely before cutting, or they will be too hard to cut.

Healthy Snack Ideas / Quesadillas

It is often easier to get kids to eat veggies when they are surrounded by cheese.  Choose a veggie that is sometimes iffy when put in front of your child and throw it on a tortilla with some shredded cheese. Cover with another tortilla and heat both sides up quickly in a skillet.  Cut into triangles and serve.
